banana cream pie

I had a fun time baking one of my Grandad’s delicious pie recipes!  I thought I would share it with you on here!  It is the perfect pie for summertime as it is light, cool, and so yummy!  Here is the recipe:

Banana Cream Pie


3 Cups Skim Milk
3/4 Cup Sugar
5 Tablespoons Corn Starch
1/2 Teaspoon Salt
3 Egg Yolks Beaten
2 Tablespoons of butter (salted)
1 1/2 Teaspoons Vanilla
3-4 Bananas sliced to cover baked 9 inch pie shell
1 9 Inch Pie Shell, Baked



Heat milk in microwave for 4-5 minutes.  Mix sugar, cornstarch, and salt, stir into hot milk.
Take 3/4 cup of hot milk mixture and blend with beaten egg yolks (adding the egg yolks directly to the hot mixture will curdle the eggs.
Blend 3/4 cup and egg yolk mixture into remaining mixture.  Heat the filling in the microwave for 3-4 minutes, stirring frequently until the mixture thickens.  
Blend butter and vanilla into thickened mixture and pour over bananas in baked pie shell.  

Chill in refrigerator.

Serve with whipped cream on top.

This recipe is so easy and really yummy!  I love the entire process of baking it because it makes me think of my Grandad!  He was an excellent chef, pie-maker, bread baker, etc, etc!  In his words, I will say that it was the best one I’ve ever made!  I hope you guys give this recipe a try!  I know you will love it!
