I love finding easy recipes that are also tasty ones. I made this recipe for my hubby last week and he asked for it again a week later. This could not get any easier, involves virtually no prep and is a nice well balanced meal.
6 boneless skinless chicken thighs
1 bag finger link potatoes (cut in half length wise) You could also use regular potatoes cut into chunks.
Greens of your choice: green beans, broccoli or asparagus
1 stick of butter, melted
zesty italian dressing mix packet
Preheat oven to 350 degrees.
Lightly salt and pepper your chicken. Cut the potatoes into small chunks. Spray the bottom of a 13×9 pan, put the chicken in the middle, potatoes on one side and veggies on the other side. Sprinkle package of italian dressing evenly over ingredients and pour melted butter evenly over the top.
Cover with aluminum foil and bake for 45 minutes. Then uncover and bake for an additional 30 minutes.
